ColwellS Special Squash

Ingredients
- 3 medium yellow or zucchini squash cut in bite-size chunks
- 1 medium onion diced
- Water to cover
- 2 Tbsp butter
- 4 oz Velveeta cheese
- Salt and pepper
Directions
- Cover squash and onion with water and butter and bring to boil
- Cook approximately 5 minutes until tender
- Drain
- Melt Velveeta cheese
- Add salt and pepper to taste
- Pour over squash Makes 4 servings
