Confetti Rice
Ingredients
- 14 c butter
- 34 c uncooked rice
- 1 12 c hot chicken broth
- 2 Tbsp grated carrots
- 2 Tbsp thinly sliced celery
- 2 Tbsp sliced green onions
- 1 Tbsp parsley flakes
- 1 Tbsp sliced toasted almonds optional
Directions
- Melt butter in a skillet
- Add rice toss to coat with butter Heat on low for 5 minutes stirring occasionally
- Place rice mixture in a 2-quart casserole bowl add hot chicken broth
- Cover and bake at 350 for 30 minutes
- Stir in the remaining ingredients
- Cook 5 additional minutes
- Serves 4
