Confetti Scalloped Potatoes

Ingredients

  • 12 c butter
  • 12 c chopped onion
  • 1 16 oz pkg frozen hashbrown potatoes
  • 1 10 34 oz can condensed cream of mushroom soup undiluted
  • 1 soup can milk
  • 1 c 4 oz shredded Cheddar cheese
  • 1 small green pepper cut up
  • 2 Tbsp chopped pimento
  • dash of pepper
  • 1 c cheese cracker crumbs divided

Directions

  1. In a skillet melt butter over medium heat
  2. Saute onion until tender
  3. Stir in potatoes soup and milk
  4. Add cheese green pepper and 12 cup of the crumbs and pimento
  5. Pour in a shallow casserole
  6. Top with remaining crumbs
  7. Bake at 375 for 35 to 40 minutes
  8. Serves 6 to 8
