Confetti Scalloped Potatoes

Ingredients

  • 12 c butter or margarine
  • 12 c chopped onion
  • 1 16 oz pkg frozen hash brown potatoes
  • 1 10 34 oz can condensed cream of mushroom soup undiluted
  • 1 soup can milk
  • 1 c 4 oz shredded Cheddar cheese
  • 1 small green pepper cut into strips
  • 2 Tbsp chopped pimiento
  • dash of pepper
  • 1 c cheese cracker crumbs divided

Directions

  1. In a skillet melt butter over medium heat
  2. Saute onion until tender
  3. Stir in potatoes soup and milk
  4. Add cheese green pepper pimiento pepper and 12 cup of the crumbs
  5. Pour into a shallow casserole dish top with remaining crumbs
  6. Bake at 375 for 35 to 40 minutes
  7. Yield 6 to 8 servings
