Cool Coconut Squares

Ingredients

• 3 13 c Bakers Angel Flake coconut
• 2 sq semi-sweet chocolate melted
• 1 qt ice cream any flavor slightly softened
• 12 c strawberry preserves

Directions

1. Mix 2 cups of the coconut into the melted chocolate stirring until coconut is completely coated
2. Press evenly over bottom of an 8-inch square pan
3. Spoon ice cream over coconut press firmly into pan
4. Top with strawberry preserves
5. Press remaining coconut over preserves
6. Cover
7. Freeze several hours or overnight
8. Makes 9 servings
