Copper Mountain Quiche
Ingredients
- 12 c butter
- 4 oz cream cheese
- 1 c 2 Tbsp flour
- 1 10 oz pkg frozen chopped spinach
- 1 c cheddar cheese grated
- 1 c Swiss cheese grated
- 3 eggs lightly beaten
- 12 c mayonnaise
- 12 c milk
- 10 slices crisp bacon crumbled
- 8 oz fresh mushrooms sliced
- 1 bunch green onions trimmed and sliced
Directions
- Combine butter cream cheese and 1 cup flour with a pastry blender until crumbly
- Press into pie plate to form crust Refrigerate
- Preheat oven to 350
- Cook spinach until tender Drain and blot on paper towels to remove all excess water
- In a large bowl combine spinach and 2 Tablespoons flour
- Add remaining ingredients and mix well
- Pour mixture into chilled shell and bake 1 hour or until set
