Copper Mountain Quiche

Ingredients

  • 12 c butter
  • 4 oz cream cheese
  • 1 c 2 Tbsp flour
  • 1 10 oz pkg frozen chopped spinach
  • 1 c cheddar cheese grated
  • 1 c Swiss cheese grated
  • 3 eggs lightly beaten
  • 12 c mayonnaise
  • 12 c milk
  • 10 slices crisp bacon crumbled
  • 8 oz fresh mushrooms sliced
  • 1 bunch green onions trimmed and sliced

Directions

  1. Combine butter cream cheese and 1 cup flour with a pastry blender until crumbly
  2. Press into pie plate to form crust Refrigerate
  3. Preheat oven to 350
  4. Cook spinach until tender Drain and blot on paper towels to remove all excess water
  5. In a large bowl combine spinach and 2 Tablespoons flour
  6. Add remaining ingredients and mix well
  7. Pour mixture into chilled shell and bake 1 hour or until set
