Coq Au Vin

Ingredients

  • 2 2 12 lb fryers cut in pieces
  • 2 tsp salt
  • 12 tsp pepper
  • 3 Tbsp flour
  • 6 Tbsp butter melted
  • 16 small whole white onions
  • 2 cloves garlic minced
  • 16 mushrooms
  • 2 c Burgundy wine
  • 12 tsp thyme
  • 1 bay leaf

Directions

  1. Wash and dry chicken
  2. Combine salt pepper and flour rub into chicken
  3. Brown chicken in butter in a Dutch oven or electric skillet
  4. Add whole onions garlic and mushrooms
  5. Cook over low heat until onions brown lightly
  6. Add wine thyme and bay leaf Cook covered over low heat 30 minutes or until tender
