Corn Casserole
Ingredients
- 2 c cooked rice
- 2 cans creamed corn
- 1 large bell pepper chopped
- 1 large onion chopped
- 1 stick butter
- 2 Tbsp pimento
- 1 Tbsp sugar
- 1 large jalapeno pepper
- salt and pepper to taste
Directions
- Saute onions bell pepper jalapeno pepper and pimento in butter
- Mix cooked rice and corn to the sauteed mix
- Add sugar salt and pepper
- Place in a buttered dish
- Cook for 20 minutes at 300
- Grate cheese on top the last 5 minutes or until melted Can be frozen
- Leave cheese off until ready to cook
