Corn Creole
Ingredients
- 1 Tbsp margarine
- 12 c finely chopped onion
- 12 c finely chopped green pepper
- 1 16 oz can whole kernel corn drained
- 12 c canned tomatoes cut up with liquid
- 12 tsp chili powder more or less to taste
- 12 tsp salt
- 14 tsp freshly ground pepper
Directions
- Melt margarine in a 1 12-quart pot
- Add onion and green pepper
- Stir over medium heat for 5 minutes
- Add remaining ingredients mix well and stir over medium heat for 5 more minutes
- Makes 4 servings
