Corn Creole

Ingredients

  • 1 Tbsp margarine
  • 12 c finely chopped onion
  • 12 c finely chopped green pepper
  • 1 16 oz can whole kernel corn drained
  • 12 c canned tomatoes cut up with liquid
  • 12 tsp chili powder more or less to taste
  • 12 tsp salt
  • 14 tsp freshly ground pepper

Directions

  1. Melt margarine in a 1 12-quart pot
  2. Add onion and green pepper
  3. Stir over medium heat for 5 minutes
  4. Add remaining ingredients mix well and stir over medium heat for 5 more minutes
  5. Makes 4 servings
