Corn Creole

Ingredients

  • 1 onion chopped
  • 5 Tbsp bacon fat
  • 1 clove garlic chopped
  • 1 can cream-style corn
  • 1 can whole kernel corn drained
  • 1 egg beaten
  • 2 c milk
  • 12 c corn meal
  • 14 bell pepper chopped
  • red pepper
  • black pepper
  • salt
  • bread crumbs
  • butter or oleo

Directions

  1. Saute onion garlic and bell pepper in bacon fat
  2. Add corn Add egg beaten with milk
  3. Add corn meal and season to taste Stir mixture over medium fire until thick
  4. Pour into a buttered casserole
  5. Sprinkle top with bread crumbs and dot with butter Bake 1 hour at 350
