Corn Meal MushA High-Protein Alternative To Pancakes

Ingredients

  • 3 c water
  • 1 c fine corn flour
  • 1 c corn meal or coarse corn flour
  • salt to taste

Directions

  1. The night before
  2. Bring water and salt to boil in a large pot remove from heat
  3. Slowly add corn flours while stirring Return to heat cook over low heat until very stiff
  4. Let cool to touch
  5. Shape into a block about 4 inches high
  6. Wrap in foil or plastic wrap and refrigerate
