Corn Meal MushA High-Protein Alternative To Pancakes

Ingredients
- 3 c water
- 1 c fine corn flour
- 1 c corn meal or coarse corn flour
- salt to taste
Directions
- The night before
- Bring water and salt to boil in a large pot remove from heat
- Slowly add corn flours while stirring Return to heat cook over low heat until very stiff
- Let cool to touch
- Shape into a block about 4 inches high
- Wrap in foil or plastic wrap and refrigerate
