Corn Meal Rolls

Ingredients

  • 2 c scalded milk
  • 12 c butter
  • 12 c sugar
  • 1 tsp salt
  • 12 c corn meal
  • 2 pkg yeast dissolved in 12 c warm water
  • 3 eggs
  • 3 c flour

Directions

  1. Scald milk
  2. Add butter sugar and salt
  3. Bring to boil and slowly add corn meal
  4. Stir until thickened
  5. Put aside
  6. Cool until lukewarm
  7. Dissolve yeast in warm water
  8. Stir into mush Add eggs
  9. Add flour for soft dough
  10. Let rise double
  11. Punch down
  12. Let rise again
  13. Make into rolls or roll out and cut with glass
  14. Butter top of rolls and sprinkle corn meal
  15. Bake at 350 for 15 minutes
