Corn Tomato Chowder

Ingredients

  • 2 oz bacon
  • 1 small onion chopped
  • 2 12 c or 1 No 2 can whole grain corn
  • 1 12 c diced tomatoes
  • 2 c diced potatoes
  • 1 tsp salt
  • 1 Tbsp sugar
  • dash of pepper
  • 1 qt boiling water
  • 1 c evaporated milk

Directions

  1. Cut bacon in small pieces and fry slowly to a golden brown in a large saucepan Add onion and cook slowly without browning for 5 minutes Add corn potatoes and tomatoes in alternate layers Sprinkle with salt sugar and pepper then add water
  2. Cook slowly until potatoes are tender
  3. Remove from heat and stir milk in slowly Serves 6 to 8
