Cornbread Skillet Casserole

Ingredients

  • 2 eggs slightly beaten
  • 1 17 oz can creamed corn
  • 14 c vegetable oil
  • 2 c Cheddar cheese
  • 1 c self-rising cornmeal
  • 1 c milk
  • 1 lb ground beef
  • 1 large onion chopped
  • 2 to 4 jalapeno peppers chopped or use 14 c bell pepper

Directions

  1. Combine eggs corn meal corn milk and oil in a bowl set aside
  2. Cook beef until browned drain well and set aside
  3. Pour 12 of corn meal mixture into a greased 1 12-inch cast-iron skillet
  4. Spread evenly with beef
  5. Top with cheese onion and peppers
  6. Pour on remaining batter
  7. Bake at 350 for 40 to 45 minutes
