Cornbread Skillet Casserole
Ingredients
- 2 eggs slightly beaten
- 1 17 oz can creamed corn
- 14 c vegetable oil
- 2 c Cheddar cheese
- 1 c self-rising cornmeal
- 1 c milk
- 1 lb ground beef
- 1 large onion chopped
- 2 to 4 jalapeno peppers chopped or use 14 c bell pepper
Directions
- Combine eggs corn meal corn milk and oil in a bowl set aside
- Cook beef until browned drain well and set aside
- Pour 12 of corn meal mixture into a greased 1 12-inch cast-iron skillet
- Spread evenly with beef
- Top with cheese onion and peppers
- Pour on remaining batter
- Bake at 350 for 40 to 45 minutes
