Cornbread Stuffing

Ingredients

  • 12 lb bacon 8 to 10 slices
  • 14 c chopped onion
  • 12 c water
  • 3 c coarse cornbread crumbs
  • 3 c fine coarse cornbread crumbs
  • 12 tsp ground sage
  • 1 c chicken or turkey broth

Directions

  1. In skillet cook the bacon until crisp Drain reserving 14 cup drippings Crumble bacon reserving the onion and water Cover Cook until barely tender about 7 minutes
  2. Combine reserved bacon drippings vegetable mixture cornbread crumbs fine cornbread crumbs ground sage and broth Toss well Bake covered in a 1 12-quart casserole at 350 for 30 minutes
  3. Makes 8 servings or enough stuffing for an 8 pound turkey
