Cornmeal Scrapple

Ingredients

  • 1 c cornmeal
  • 1 c milk
  • 1 tsp sugar
  • 1 tsp salt
  • 2 34 c boiling water
  • 12 to 1 pork sausage cooked drained and crumbled

Directions

  1. In a saucepan combine the cornmeal milk sugar and salt gradually stir in water
  2. Cook and stir until thickened and bubbly Reduce heat cook covered 10 minutes longer or until very thick stirring occasionally
  3. Remove from heat and stir in sausage
  4. Pour into buttered loaf pan
  5. Cover with plastic wrap and refrigerate To serve cut 13-inch slices dip in flour on both sides
  6. Fry in skillet in melted butter over medium heat until browned on both sides
  7. Serve warm with syrup
