Cornpatch Spoon Bread

Ingredients

  • 1 c boiling water
  • 34 c white or yellow corn meal
  • 3 tsp baking powder
  • 1 can cream-style corn
  • 2 eggs beaten
  • 1 tsp salt
  • 12 tsp soda
  • 2 Tbsp butter melted

Directions

  1. Stir boiling water into corn meal mixing thoroughly
  2. Add remaining ingredients
  3. Stir quickly until just mixed
  4. Place in very hot generously buttered skillet or casserole
  5. Bake in moderate oven at 375 about 40 minutes or until nicely done Serves 5 to 6
