Ingredients
- 1 c whole wheat flour
- 1 c yellow corn meal
- 4 tsp baking powder
- 12 tsp salt optional
- 14 c sugar if sweeter muffin desired
- 2 eggs
- 1 c skim or low-fat milk
- 3 Tbsp margarine melted
- 1 c cream-style corn
Directions
- No cream style corn
- Substitute 14 cup milk buttermilk
- or yogurt
- a
- pinch of baking soda and corn kernels to make 1 cup
