Cottage Cheese Muffins

Ingredients

  • 1 34 c flour
  • 14 tsp salt
  • 12 tsp soda
  • 12 c cornflakes
  • 1 egg
  • 1 c cottage cheese
  • 2 13 Tbsp sugar
  • 1 tsp baking powder
  • 12 c quick oats
  • 4 Tbsp melted fat
  • 1 c milk

Directions

  1. Sift the first 5 ingredients into bowl and mix in oats and cornflakes
  2. Beat egg yolk add fat cheese and milk
  3. Pour liquid mixture into a well in the dry ingredients and beat
  4. Fold in the beaten egg whites
  5. Bake in muffin tins in a slow oven at 300 about 1 hour
