Cottage Cheese Spoon Bread

Ingredients

  • 1 34 c milk
  • 12 c cornmeal
  • 1 tsp salt
  • 1 Tbsp sugar
  • 3 egg yolks beaten
  • 3 Tbsp butter
  • 1 c cottage cheese
  • 3 egg whites
  • melted butter

Directions

  1. Scald milk in saucepan
  2. Add cornmeal and cook stirring constantly until thick
  3. Mix in sugar and salt
  4. Mix small amount of hot cornmeal mixture with egg yolks return to saucepan and mix thoroughly
  5. Stir in butter and cottage cheese
  6. Beat egg whites until stiff
  7. Gradually fold in cornmeal mixture
  8. Pour into baking dish and bake 35 minutes
  9. Serve with melted butter
