Cottage Cheese Spoon Bread
Ingredients
- 1 34 c milk
- 12 c cornmeal
- 1 tsp salt
- 1 Tbsp sugar
- 3 egg yolks beaten
- 3 Tbsp butter
- 1 c cottage cheese
- 3 egg whites
- melted butter
Directions
- Scald milk in saucepan
- Add cornmeal and cook stirring constantly until thick
- Mix in sugar and salt
- Mix small amount of hot cornmeal mixture with egg yolks return to saucepan and mix thoroughly
- Stir in butter and cottage cheese
- Beat egg whites until stiff
- Gradually fold in cornmeal mixture
- Pour into baking dish and bake 35 minutes
- Serve with melted butter
