Country Corn Muffins
Ingredients
- 1 c yellow cornmeal
- 1 c all-purpose flour
- 1 Tbsp plus 2 tsp baking powder
- 14 tsp salt
- 2 Tbsp sugar optional
- 12 tsp baking soda
- 1 egg
- 1 85 oz can cream-style corn
- 1 8 oz carton commercial sour cream
- 2 Tbsp vegetable oil
Directions
- Combine first 6 ingredients in a large bowl make a well in center of mixture
- Combine remaining ingredients add to dry ingredients stirring just until moistened
- Spoon into greased muffin pans
- Bake at 400 for 12 to 15 minutes or until golden brown
