Country Corn Muffins

Ingredients

  • 1 c yellow cornmeal
  • 1 c all-purpose flour
  • 1 Tbsp plus 2 tsp baking powder
  • 14 tsp salt
  • 2 Tbsp sugar optional
  • 12 tsp baking soda
  • 1 egg
  • 1 85 oz can cream-style corn
  • 1 8 oz carton commercial sour cream
  • 2 Tbsp vegetable oil

Directions

  1. Combine first 6 ingredients in a large bowl make a well in center of mixture
  2. Combine remaining ingredients add to dry ingredients stirring just until moistened
  3. Spoon into greased muffin pans
  4. Bake at 400 for 12 to 15 minutes or until golden brown
  5. Yield
