Country Fair Corn Sticks

Ingredients

  • 34 c yellow corn meal
  • 34 c flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 14 c salad oil
  • 12 medium red bell pepper diced
  • 2 green onions thinly sliced
  • 1 8 12 to 8 34 oz can cream-style corn
  • 12 c milk
  • 1 egg

Directions

  1. Preheat oven to 400
  2. Grease well 14 corn stick molds
  3. Place in oven while preparing batter
  4. In large bowl mix corn meal flour sugar baking powder and salt
  5. In small skillet add oil and cook pepper and onions until tender
  6. Remove skillet from heat
  7. Stir in corn and milk then egg until mixed stir into dry ingredients until batter is just blended
  8. Spoon batter into preheated molds
  9. Bake 15 minutes or until done
  10. Cool in molds on wire rack 5 minutes
  11. Remove from molds
