Country Vegetable Simmer

Ingredients

  • 12 lb fresh green beans
  • 4 small new red potatoes quartered
  • 2 small onions
  • 3 Tbsp butter or margarine
  • 8 fresh mushrooms halved
  • 1 medium ripe tomato cut up
  • 1 tsp basil leaves
  • 14 tsp salt
  • 14 tsp pepper
  • 14 tsp thyme leaves
  • 2 Tbsp tomato paste
  • 12 tsp minced fresh garlic
  • 14 c chopped fresh parsley

Directions

  1. In a 3-quart saucepan combine beans potatoes and onions Add enough water to cover Bring to a full boil
  2. Cook over medium heat stirring occasionally until vegetables are crispy-tender 15 to 20 minutes
  3. Drain
  4. Return to pan
  5. Add remaining ingredients except parsley Cook over medium heat stirring occasionally until heated through 10 to 12 minutes Stir in parsley
