Cousin CarolS Seafood Sauce

Ingredients

  • 1 to 2 Tbsp olive oil
  • 2 to 3 cloves garlic
  • 1 bunch parsley
  • 14 to 12 c white wine
  • 1 lb clams shrimp crab meat or squid
  • 4 8 oz cans tomato sauce
  • basil to taste
  • 1 can clam juice optional
  • spaghetti

Directions

  1. In a saucepan add oil and minced garlic
  2. Chop parsley leaves and add to saucepan
  3. Stir until parsley is limp
  4. Add seafood cleaned and de-shelled
  5. Add tomato sauce wine and basil
  6. The sauce should be a light red-pink color
  7. Reduce liquid until meat is just showing through the liquid
  8. If you are using all fresh seafood add a can of clam juice to add flavor to the sauce Reduce as noted before
  9. Cook spaghetti until it is al dente
  10. Add sauce toss and serve
