Cousin CarolS Seafood Sauce
Ingredients
- 1 to 2 Tbsp olive oil
- 2 to 3 cloves garlic
- 1 bunch parsley
- 14 to 12 c white wine
- 1 lb clams shrimp crab meat or squid
- 4 8 oz cans tomato sauce
- basil to taste
- 1 can clam juice optional
- spaghetti
Directions
- In a saucepan add oil and minced garlic
- Chop parsley leaves and add to saucepan
- Stir until parsley is limp
- Add seafood cleaned and de-shelled
- Add tomato sauce wine and basil
- The sauce should be a light red-pink color
- Reduce liquid until meat is just showing through the liquid
- If you are using all fresh seafood add a can of clam juice to add flavor to the sauce Reduce as noted before
- Cook spaghetti until it is al dente
- Add sauce toss and serve
