CowboyS DelightPineapple Dessert

Ingredients

• 12 lb box vanilla wafers
• 14 c melted butter
• 1 12 c powdered sugar
• 12 c butter
• 2 eggs
• 12 pt whipping cream
• 1 small can crushed pineapple drained
• 12 pt chopped nuts if desired

Directions

1. Mix together the vanilla wafers and 14 cup melted butter and pack into an 8 x 8-inch dessert dish
2. Cream the powdered sugar and 12 cup butter
3. Add eggs and beat 10 minutes
4. Beat whipping cream until stiff could use Cool Whip
5. Add drained crushed pineapple and nuts if desired
6. Mix the sugar butter and egg mixture
7. Top with pineapple mixture
8. Decorate with vanilla wafer crumbs whipping cream cherries and nuts
9. Refrigerate for 8 hours
