Crab Au Gratin
Ingredients
- 1 lb lump or backfin crabmeat
- 2 Tbsp chopped onion
- 3 Tbsp butter
- 2 Tbsp flour
- 1 14 c milk
- 1 c shredded sharp cheese about 4 oz
- salt and pepper to taste
Directions
- Pick through crab to remove shell
- Put it in a 2-quart casserole dish and set aside
- Saute onion in butter
- Remove from heat and add flour
- Set back on heat and add milk immediately Stir constantly until mixture thickens and comes to a boil
- Add shredded cheese and stir quickly until it melts
- Remove from heat
- Salt and pepper to taste
- Gently mix it with crabmeat in the casserole dish
- Top with buttered bread crumbs
- Bake at 325 for 30 to 45 minutes or until hot and bubbly
- Can sprinkle with paprika before baking
