Crab Cakes

Ingredients

  • 2 lb crabmeat
  • 12 c diced celery
  • 12 tsp mustard
  • 2 Tbsp Worcestershire
  • 12 tsp parsley flakes
  • 2 Tbsp Old Bay seasoning
  • 2 Tbsp mayonnaise
  • 2 eggs
  • 2 pkg saltine crackers
  • cracker meal

Directions

  1. Break up saltines
  2. Mix all other ingredients except cracker meal
  3. Let stand until crackers are moist
  4. Add crabmeat roll in cracker meal
  5. Makes about 2 12 dozen medium crab cakes
  6. Let stand in refrigerator at least an hour before frying
