Crab Gumbo

Crab Gumbo

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp all purpose flour
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 can 28 oz tomatoes
  • 1 tsp sugar
  • 1 Tbsp Worcestershire sauce
  • salt
  • 18 tsp hot pepper sauce
  • 1 bay leaf
  • 1 pkg 10 oz frozen okra sliced
  • 2 pkg 6 oz frozen Alaska Snow crab meat thawed drained or imitation crab
  • 2-23 c cooked rice without salt or fat

Directions

  1. Heat oil in large kettle on medium heat
  2. Add flour stirring constantly until dark brown but not burned
  3. Add onion and garlic Cook until tender stirring occasionally
  4. Gradually stir in undrained tomatoes
  5. Add sugar worcestershire sauce salt hot pepper sauce and bay leaf
  6. Stir to break up tomatoes
  7. Bring to a boil
  8. Reduce heat
  9. Cover
  10. Simmer 10 minutes to blend flavor stirring occasionally
  11. Add okra
  12. Cook 5 minutes or until tender stirring occasionally
  13. Add crab
  14. Stir gently and heat through Discard bay leaf
  15. Serve gumbo over rice
  16. 4 servings
