Crab Quiche

Ingredients

  • 4 Tbsp butter
  • 3 Tbsp minced green onions
  • 6 eggs
  • 2 c heavy or whipping cream
  • 34 to 1 c 2 milk
  • 12 tsp salt
  • 1 12 lb imitation crabmeat
  • 3 Tbsp dry vermouth
  • 3 drops liquid cayenne or 18 tsp powdered cayenne
  • 1 34 c shredded Swiss cheese
  • 2 pie crusts

Directions

  1. Melt butter
  2. Add green onions and cook until tender about 5 minutes
  3. Mix eggs cream milk and salt
  4. Stir in green onion mixture and remaining ingredients
  5. Divide between 2 pie crusts and bake at 425 for 15 minutes Then reduce heat to 325 and bake 45 to 55 minutes or until knife inserted in center comes out clean
  6. Let stand 10 minutes before serving
