Crabmeat Quesadillas

Ingredients

  • 8 oz fresh lump crabmeat drained
  • 12 c diced sweet red pepper
  • 13 c chopped green onions
  • 14 c plus 1 Tbsp nonfat sour cream
  • 1 tsp hot sauce
  • 12 tsp ground cumin
  • 10 8-inch flour tortillas
  • 1 14 c 5 oz shredded Monterey Jack cheese

Directions

  1. Combine first 6 ingredients in a medium bowl stir well
  2. Spoon crabmeat mixture evenly over 5 tortillas
  3. Spread to within 12-inch of edge
  4. Sprinkle evenly with cheese and top with remaining tortillas
