Cracklin Bread

Ingredients
- 2 c corn meal
- 1 c boiling water
- 1 Tbsp shortening
- 2 eggs
- 2 12 c milk
- 1 tsp salt
- 2 tsp baking powder
- 1 c broken cracklings
Directions
- Scald corn meal with boiling water
- Add shortening and cool slightly
- Beat eggs thoroughly
- Add milk and salt
- Combine the two mixtures
- Add baking powder and cracklings and blend thoroughly
- Turn into well-greased pan and bake in a moderately hot oven at 375 for 25 to 30 minutes
- Makes 6 servings
