Cranberry Almond Biscotti

Ingredients

  • 34 c dried cranberries
  • 12 c apple juice
  • 1 12 c whole unblanched almonds
  • 2 c flour
  • 34 c sugar
  • 1 tsp cinnamon
  • 12 tsp baking powder
  • 12 tsp baking soda
  • 13 c honey
  • 13 c water

Directions

  1. In a small bowl plump cranberries in apple juice
  2. Drain and set aside
  3. Preheat oven to 350
  4. Cover baking sheet with parchment or buttered wax paper set aside
  5. In food processor grind 34 cup of the almonds to a fine powder
  6. Scrape ground nuts into a large bowl
  7. Add flour sugar cinnamon baking powder soda remaining 34 cup whole almonds and cranberries
  8. Mix to blend
  9. Pour in honey and water
  10. Mix until ingredients form a stiff dough
  11. Divide dough into 2 parts
  12. Roll each piece into a 12-inch log
  13. Place dough logs on prepared sheet
