Cranberry Fruit Bread

Ingredients

  • 1 bag 12 oz fresh or frozen cranberries halved
  • 2 c pecan halves
  • 1 c chopped mixed candied fruit
  • 1 c chopped dates
  • 1 c golden raisins
  • 1 Tbsp grated orange peel
  • 4 c all-purpose flour divided
  • 2 c sugar
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 14 tsp salt
  • 2 eggs
  • 1 c orange juice
  • 14 c shortening melted
  • 14 c warm water

Directions

  1. Combine cranberries pecans fruit dates raisins and orange peel with 14 cup flour set aside
  2. In another bowl combine sugar baking powder baking soda salt and remaining flour set aside
  3. In a large mixing bowl beat eggs
  4. Add orange juice shortening and water
  5. Add flour mixture stir just until combined Fold in cranberry mixture
  6. Spoon into three greased and wax paper-lined 8 12 x 4 12 x 2 12-inch loaf pans
  7. Bake at 350 for 60 to 65 minutes or until breads test done
  8. Yields 3 loaves
