Cranberry Nut Loaf

Ingredients

  • 2 c sifted flour
  • 1 c sugar
  • 1 12 tsp baking powder
  • 12 tsp baking soda
  • 1 tsp salt
  • 14 c shortening
  • 34 c orange juice
  • 1 Tbsp grated orange rind
  • 1 egg well beaten
  • 1 c raw cranberries coarsely chopped in blender
  • 12 c chopped nuts

Directions

  1. Preheat oven to 350
  2. Grease two 9 x 5 x 3-inch loaf pans Sift dry ingredients
  3. Cut in shortening until mixture resembles coarse cornmeal
  4. Combine orange juice rind and egg
  5. Pour all at once into dry ingredients
  6. Mix slightly Carefully fold in cranberries and nuts Spoon into prepared pans
  7. Bake at 350 for 1 hour
