Cranberry Nut Loaf
Ingredients
- 2 c sifted flour
- 1 c sugar
- 1 12 tsp baking powder
- 12 tsp baking soda
- 1 tsp salt
- 14 c shortening
- 34 c orange juice
- 1 Tbsp grated orange rind
- 1 egg well beaten
- 1 c raw cranberries coarsely chopped in blender
- 12 c chopped nuts
Directions
- Preheat oven to 350
- Grease two 9 x 5 x 3-inch loaf pans Sift dry ingredients
- Cut in shortening until mixture resembles coarse cornmeal
- Combine orange juice rind and egg
- Pour all at once into dry ingredients
- Mix slightly Carefully fold in cranberries and nuts Spoon into prepared pans
- Bake at 350 for 1 hour
