Cranberry Scones
Ingredients
- 1 12 c whole wheat flour
- 12 c unbleached flour
- 14 c sugar
- 2 tsp baking powder
- 12 tsp salt
- 14 tsp ground cardamom
- 14 tsp ground nutmeg
- 5 Tbsp cold butter
- 13 c heavy cream
- 13 c plus 1 Tbsp milk
- grated zest of 1 lemon
- 34 c cranberries
- 1 Tbsp cream
- sugar
Directions
- Combine flours sugar baking powder salt and spices
- Add butter cut in with pastry blender until coarsely mixed
- Make a well
- Add cream milk and lemon zest
- Stir
- Add cranberries stir until dough coheres
- Shape into ball
- Place in center of greased baking sheet
- Pat into a 9-inch disk
- Score deeply into 8 wedges
- Brush top with 1 tablespoon of cream and sprinkle with sugar
- Bake at 425 for 25 minutes
- Cut apart at score marks and serve hot
