Cranberry Sweet Potatoes
Ingredients
- 12 cflour
- 12 c brown sugar
- 12 c old fashioned or quick oats uncooked
- 1 tsp cinnamon
- 13 c margarine
- 2 17 oz cans sweet potatoes
- 1 or 2 c fresh cranberries to taste
- 1 12 c mini marshmallows
Directions
- Combine flour brown sugar oats and cinnamon and cut in margarine until the mixture resembles coarse crumb mixture
- Toss 1 cup of crumb mixture with sweet potatoes drained and the cranberries
- Place in 1 12-quart casserole
- Top with remaining crumbs
- Bake at 350 for 35 minutes
- Sprinkle marshmallows over top and broil until lightly brown
- Serves 6
