Crawfish Casserole

Ingredients

  • 1 pkg yellow rice 12 box
  • 1 lb crawfish tails
  • 1 stick margarine
  • 1 chopped bell pepper
  • 1 can cream of mushroom soup
  • 8 oz grated cheese
  • 1 can Ro-Tel tomatoes
  • 1 chopped onion

Directions

  1. Saute celery bell pepper and onion in margarine
  2. Combine with tomatoes and steam on low fire
  3. Mix in soup
  4. Cook rice according to directions
  5. Mix rice with tomato-soup mixture
  6. Add grated cheese and crawfish
  7. Bake at 350 about 40 minutes or until bubbling
  8. Dont stir
  9. Enjoy with salad and French bread Serves 8
