Crawfish Tortellini

Ingredients
- 1 lb crawfish tails
- 1 7 oz pkg tortellini with Parmesan cheese
- 1 stick butter
- 1 medium onion finely chopped
- 2 toes garlic minced
- 12 c Parmesan cheese grated
- 1 pt whipping cream
- 18 c fresh parsley chopped
- 2 tsp cornstarch with water
Directions
- Saute onion and garlic in butter
- Add crawfish slightly rinsed and continue cooking approximately 5 minutes
- Add Parmesan cheese parsley and whipping cream
- Prepare tortellini as directed
- Fold in with sauce and season with salt and red pepper
- If sauce needs thickening mix cornstarch with water and add to sauce
