Cream-Filled Oatmeal Cookies

Ingredients

  • 2 c shortening
  • 2 c packed brown sugar
  • 2 c sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 2 c sifted flour
  • 6 c quick cooking oats
  • 1 12 c coconut
  • 2 tsp salt
  • 2 tsp soda
  • Filling

Directions

  1. Cream shortening brown sugar and sugar in bowl until light and fluffy
  2. Stir in vanilla
  3. Beat in eggs 1 at a time beating well after each addition
  4. Stir in mixture of sifted flour oats coconut salt and soda
  5. Roll into balls
  6. Place on greased cookie sheet
  7. Bake at 350 for 8 to 10 minutes or until lightly browned Cool on cookie sheet for 2 minutes
  8. Remove to wire rack to cool completely
  9. Spread filling between cookies
  10. Yield
  11. 36 servings
