Cream Coconut Icing

Ingredients

  • 2 12 c powdered sugar
  • 3 Tbsp butter
  • 2 Tbsp lemon juice
  • dash of salt
  • grated rind of 14 lemon or orange
  • 1 12 c coconut

Directions

  1. Cream the butter until soft
  2. Add sugar alternately with lemon juice
  3. Add a dash of salt
  4. Beat until smooth and light
  5. Add grated rind of lemon
  6. Spread and sprinkle coconut on top and sides of cake
