Cream Coconut Icing

Ingredients
- 2 12 c powdered sugar
- 3 Tbsp butter
- 2 Tbsp lemon juice
- dash of salt
- grated rind of 14 lemon or orange
- 1 12 c coconut
Directions
- Cream the butter until soft
- Add sugar alternately with lemon juice
- Add a dash of salt
- Beat until smooth and light
- Add grated rind of lemon
- Spread and sprinkle coconut on top and sides of cake
