Cream Of Asparagus Soup

Ingredients

  • 1 10 oz pkg frozen asparagus
  • 2 Tbsp margarine low-fat
  • 3 Tbsp flour
  • 1 Tbsp parsley chopped
  • 1 c water lightly salted
  • 2 green onions chopped fine
  • 4 c skim milk
  • salt to taste

Directions

  1. Cook asparagus in water until tender
  2. Whip asparagus in blender until smooth
  3. Saute onions in margarine
  4. Stir in flour and cook until bubbly
  5. Add milk gradually stirring until thickened
  6. Stir in asparagus puree
  7. Add chopped parsley and salt to taste
  8. Do not boil
