Cream Of Broccoli Soup
Ingredients
- 3 c broccoli spears
- 3 c water
- 3 Tbsp margarine
- 14 c minced onion
- 3 Tbsp flour
- 2 12 c milk
- 34 tsp salt
- dash of pepper
- 12 c cream or half and half
Directions
- Cook broccoli until tender in water cool
- Then puree broccoli and cooking water in blender
- Melt margarine
- Saute onion in it until transparent
- Blend flour into margarine and onion mixture cook until foamy
- Stir in milk
- Gradually bring to a boil stirring constantly
