Cream Of Broccoli Soup
Ingredients
- 2 Tbsp butter
- 1 medium onion chopped
- 2 Tbsp flour
- 12 tsp salt
- 12 tsp pepper
- 1 can 14 oz chicken broth
- 1 10 oz pkg frozen chopped broccoli thawed and well drained
- 2 c milk
- grated Parmesan cheese
Directions
- Melt butter add onions and saute until light golden
- Blend in flour salt pepper and stir constantly about 2 minutes
- Gradually add broth then broccoli and bring to boil
- Stir frequently cover and simmer until broccoli is tender
- Puree in batches
- Return to saucepan add milk and bring to simmer
- Ladle into bowl and sprinkle with grated cheese run under preheated broiler until cheese is browned
