Cream Of Carrot Soup

Ingredients

  • 3 c shredded or grated carrots
  • 14 c chopped onion
  • 14 c chopped celery
  • 4 c chicken broth
  • 4 c heavy whipping cream half and half can be substituted
  • salt and white pepper to taste

Directions

  1. In saucepan combine first 4 ingredients simmer until tender Do not overcook vegetables should retain texture
  2. Remove from heat and reserve
  3. In a second saucepan warm cream
  4. Bring up to but do not allow to boil
  5. Cream will thicken as it heats
  6. At desired consistency slowly stir in broth and vegetable mixture and season to taste
  7. Makes 4 large 1 12 to 1 34 cup servings
