Cream Of Carrot Soup With Homemade Croutons
Ingredients
- 2 Tbsp butter
- 1 small onion chopped
- 1 medium potato chopped
- 1 lb carrots peeled and chopped
- 3 c vegetable stock
- several pinches of sugar
- 23 c half and half
- salt and pepper to taste
- 2 Tbsp butter
- 1 tsp favorite herb basil or oregano work well
- 2 slices white bread
Directions
- Melt butter in a pan and saute the onions potatoes and carrots for ten minutes on med low heat
- Add stock and sugar and bring slowly to a boil
- Simmer for 30 minutes
- In a food processor puree soup
- Return to pan and add half and half Season with salt and pepper and serve
