Cream Of Carrot Soup With Homemade Croutons

Ingredients

  • 2 Tbsp butter
  • 1 small onion chopped
  • 1 medium potato chopped
  • 1 lb carrots peeled and chopped
  • 3 c vegetable stock
  • several pinches of sugar
  • 23 c half and half
  • salt and pepper to taste
  • 2 Tbsp butter
  • 1 tsp favorite herb basil or oregano work well
  • 2 slices white bread

Directions

  1. Melt butter in a pan and saute the onions potatoes and carrots for ten minutes on med low heat
  2. Add stock and sugar and bring slowly to a boil
  3. Simmer for 30 minutes
  4. In a food processor puree soup
  5. Return to pan and add half and half Season with salt and pepper and serve
