Cream Of Cheese Soup

Ingredients
- 12 c grated carrots
- 12 c finely chopped celery
- 1 c water
- 2 Tbsp chopped onion
- 14 c low-fat margarine
- 6 Tbsp flour
- 2 c skim milk
- 2 c low-fat chicken broth
- 12 lb low-fat cheese diced
Directions
- Cook carrots and celery in boiling water until tender
- Cook onion in margarine until tender but not brown
- Stir in flour Add milk and chicken broth
- Cook over low heat until thickened stirring occasionally
- Makes 6 cups
