Cream Of Cheese Soup

Ingredients

  • 12 c grated carrots
  • 12 c finely chopped celery
  • 1 c water
  • 2 Tbsp chopped onion
  • 14 c low-fat margarine
  • 6 Tbsp flour
  • 2 c skim milk
  • 2 c low-fat chicken broth
  • 12 lb low-fat cheese diced

Directions

  1. Cook carrots and celery in boiling water until tender
  2. Cook onion in margarine until tender but not brown
  3. Stir in flour Add milk and chicken broth
  4. Cook over low heat until thickened stirring occasionally
  5. Makes 6 cups
