Cream Of Mushroom Soup

Ingredients

  • 14 c butter
  • 34 c chopped green onions including tops
  • 2 c chopped fresh mushrooms
  • 2 Tbsp flour
  • 1 c half and half
  • 1 c chicken broth
  • 14 tsp salt
  • pepper to taste

Directions

  1. In a large skillet cook green onions in butter over low heat for 5 minutes
  2. Add the chopped mushrooms cook mixture 2 minutes Add flour cook stirring 3 minutes
  3. Remove pan from heat add chicken broth and half and half in a steady stream whisking Bring soup to a boil over moderate heat
  4. Simmer stirring for 5 minutes
  5. Salt and pepper to taste
