Cream Of Oyster Soup

Ingredients
- 1 qt oysters
- 1 Tbsp butter
- 1 Tbsp flour
- 4 c light cream
- 2 Tbsp whipped cream
Directions
- Chop and scald oysters in their liquid
- Blend butter and flour and add slowly to cream heated in double-boiler
- Stir until this is thickened and smooth then add oysters and their juices
- Just before serving soup stir in the whipped cream
