Cream Of Oyster Soup

Ingredients

  • 1 qt oysters
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 4 c light cream
  • 2 Tbsp whipped cream

Directions

  1. Chop and scald oysters in their liquid
  2. Blend butter and flour and add slowly to cream heated in double-boiler
  3. Stir until this is thickened and smooth then add oysters and their juices
  4. Just before serving soup stir in the whipped cream
