Cream Of Pimiento Soup

Ingredients
- 1 small onion chopped
- 2 pimientos chopped
- 3 Tbsp Crisco
- 3 Tbsp flour
- 1 12 c chicken broth
- 1 12 c milk may be partly cream
- 34 c grated cheese
- salt and freshly ground black pepper to taste
Directions
- Saute the onion and pimientos in the butter until the onion is tender but not brown
- Blend in the flour gradually add the broth and milk
- Cook stirring until thickened
- Add the cheese and stir until melted
- Season with salt and pepper
