Cream Puff Pastry

Ingredients

  • 23 c water
  • 13 c butter
  • 23 c all-purpose flour
  • 18 tsp salt
  • 3 eggs

Directions

  1. Combine water and butter in saucepan
  2. Bring to boil
  3. Add flour and salt to butter mixture
  4. Stir vigorously until mixture leaves sides of pan and forms a ball
  5. Let cool 4 to 5 minutes Add eggs one at a time beating with wooden spoon after each addition
  6. Spoon dough into mound on baking sheet and bake as directed
  7. Cut tops off and pull out soft dough inside
  8. Fill with cream filling
