Cream PuffsYield 6 Medium Puffs
Ingredients
- 2 Tbsp butter or margarine
- 12 c boiling water
- 12 c flour
- 18 tsp salt
- 2 eggs
Directions
- In saucepan melt butter in boiling water
- Add flour and salt all at once stir vigorously
- Cook and stir until mixture forms a ball that doesnt separate
- Remove from heat cool slightly and add eggs one at a time beating with a spoon after each addition until smooth
- Drop
- by heaping tablespoonfuls 3 inches apart on lightly greased baking sheet
- Bake at 450 for 15 minutes Reduce heat to 325 and bake 10 minutes
- Remove from oven cut off tops
- Turn oven off return cream puffs to oven to dry 20 minutes
- Cool on rack
