Cream PuffsYield  6 Medium Puffs

Ingredients

  • 2 Tbsp butter or margarine
  • 12 c boiling water
  • 12 c flour
  • 18 tsp salt
  • 2 eggs

Directions

  1. In saucepan melt butter in boiling water
  2. Add flour and salt all at once stir vigorously
  3. Cook and stir until mixture forms a ball that doesnt separate
  4. Remove from heat cool slightly and add eggs one at a time beating with a spoon after each addition until smooth
  5. Drop
  6. by heaping tablespoonfuls 3 inches apart on lightly greased baking sheet
  7. Bake at 450 for 15 minutes Reduce heat to 325 and bake 10 minutes
  8. Remove from oven cut off tops
  9. Turn oven off return cream puffs to oven to dry 20 minutes
  10. Cool on rack
