Creamed Peas

Ingredients

• 3 c frozen peas
• 1 c sliced scallions
• 1 12 Tbsp butter
• 1 Tbsp all-purpose flour
• 1 c whipping cream
• 12 tsp finely shredded lemon peel
• 34 c shredded Swiss cheese
• 14 tsp salt

Directions

1. In large saucepan cook peas according to package directions In another medium saucepan cook onion in butter until tender but not brown
2. Blend in flour and 14 teaspoon salt
3. Add cream and lemon peel
4. Add Swiss cheese cooking until melted
5. Put peas in serving bowl
6. Pour sauce over peas and serve
