Creamed Spinach

Ingredients
- 4 Tbsp butter
- 1 large onion chopped
- 2 lb fresh spinach
- 2 Tbsp flour
- 1 c milk
- 12 tsp nutmeg
- 14 tsp allspice
- 1 tsp salt
- 14 tsp pepper
Directions
- Melt 2 tablespoons butter in a large saucepan
- Saute onion in butter until brown
- Add washed drained spinach to onion and cook covered for 3 to 5 minutes
- Drain and chop
- Return spinach to a saucepan
- While spinach is cooking work remaining butter and flour together with a fork
- When spinach is cooked lower heat and add butter-flour mixture a little at a time until all is smoothly incorporated
- Add milk and seasonings
- Reheat
- Use as a garnish with other vegetables
- Serves 6
